New Orleans native executive chef-owner Scott Serpas bring some of his hometown's culinary influence to his namesake restaurant Serpas True Food at the Pavilion at Studioplex, with entrees that have included flash-fried oysters, pan-roasted redfish and cast iron-seared venison flank.
"Serpas, formerly the head toque with Concentrics Restaurants and a
native of New Orleans, brings a taste of that city's traditional cuisine
to his menu, with such flavors as beignets at brunch and a Sazerac
among the cocktails. ... For mains, target the boneless beef short rib
served with a celery root potato gratin that could easily be a main dish
for vegetarians. And for dessert, do not miss the fried pies."
