Brisket, hot sausage, smoked chicken, and baby back pork ribs are among the smokehouse favorites at Ruby's BBQ, open since 1988.
From the restaurant's website:
"Ruby’s BBQ offers real pit-smoked barbecue with both traditional and non-traditional sides, as well as Cajun and vegetarian-inspired dishes. ... For meat preparation, we prefer the tried and true slow-cooking method, using oak wood in our brick and mortar pits. ... Many popular BBQ joints use Southern Pride or similar large smokers. These rely on gas or electricity and little wood, but they do smoke lots of meats at once. Our slow-cooking method requires more human intervention and care. We feel the seasoned brick pits result in the unique taste and texture of a back-roads Texas product. Our all-natural beef brisket is hormone- and steroid-free."
Beer available. Serving lunch and dinner daily. Late-night Fri–Sat.
"Ruby’s BBQ, a campus-area institution ... is a favorite of impecunious students and ’cue connoisseurs alike. The laid-back Austin haunt serves up all-natural (i.e., hormone-free), thinly sliced beef that is consistently good."
