Liebrandt's cuisine is about classic good taste embellished with whimsy: a 2-inch-round foie-gras terrine comes with a spiced strawberry gelée, tiny pickled strawberries, and ginger. And his homage to chicken Kiev is a marvel: a juicy, seasoned chicken breast that, when cut into, floods forth a gush of butter.
