"At a Brazilian Style of Steak house each table uses a cue to control the pace of the meal. The cue has a green side and a red side. The green side signals the Gaucho chefs to bring out skewers of sizzling fire-roasted meats to carve at the table. The red side indicates that you are either taking a break or are finished. Turning back to green will cue the Gaucho chefs to continue to offer the meats again."

 

Wine available. Serving dinner nightly. Sun brunch 10 am–2 pm.

 

"Along with having a full buffet to choose from, there's a small piece of wood divided into three colours — green, yellow and red — on each table. Put the marker green side up and gauchos will bring one of seven different kinds of meat on skewers (there's around 17 served during dinner). ... Bolero is well worth the price, but make sure you give yourself plenty of time. You could easily spend an hour or two chatting with family or a group of friends while stuffing yourself full of savoury meats."
