When Brown Sugar Cafe opened in Boston's Fenway neighborhood in 1996, its sophisticated flavors quickly seduced many local students and residents. Now down to a location on Commonwealth Avenue in Boston and sister restaurant The Similans in Cambridge, the comfortable eateries offer menus so extensive that diners have long lists of reasons to return. Brown Sugar's chefs have a solid handle on the contrast of flavors that define Thai cuisine: Sweet, salty, spicy and sour notes fill most dishes, such as the na-tang (minced pork and shrimp with mint, coconut milk and crushed peanuts). Any of the chef's many specialties, as well as deep-fried whole fish, are recommended.
