"We're incredibly lucky to have Tei-An in Dallas, not only because chef-owner Teiichi Sakurai makes sublime soba (he learned the craft at Tsukiji Soba Academy, where he studied with Inouye), but because soba is just one of many things the 2-year-old restaurant does brilliantly. Since visiting Tei-An when I first came to Dallas, I've returned more than half a dozen times, during which the restaurant has progressed from remarkable to truly extraordinary."
