Expect elegance at Ellyngton's, a well-regarded breakfast, lunch and Sunday champagne brunch restaurant within the historic Brown Palace Hotel. Be sure to walk slowly through the lobby on the way to your meal — all the better to see and be seen, as locals and out-of-towners sip tea while listening to the piano or harp. Once inside the restaurant, with its chandeliers, elaborate wallpaper and heavy upholstery, expect the power-breakfast and power-lunch crowd during the week and a mix of area families and tourists on the weekends. The menu is international in scope and well-executed. The New England-style chowder is a solid starter. At brunch, sip Dom Perignon while sampling a bit of this and that from one of the biggest brunch selections in town, from blintzes and eggs Benedict to top-grade smoked salmon and sushi.
