DESCRIPTION
Former Nicollet Island Inn employees David Burley and Stephanie Shimp launched Edina Grill in 1999, later adding Shimp's brother and former NASCAR driver Luke Shimp to the team. Subsequently, they expanded their local empire of urban diners to include Highland Grill, Longfellow Grill and Groveland Tap. In cozy and eclectic surroundings, the emphasis at the Edina Grill is on fresh ingredients and made-from-scratch home-style cooking. All-day breakfast specialties may include a breakfast burrito, the smoked salmon scramble and meat loaf hash and eggs. Non-breakfast starters can range from tempura green beans and pierogies to Gorgonzola fritters and sweet potato fries. Burger choices include a bison burger and what many consider to be the best turkey burger in the Twin Cities. And try winning entrées such as mac and cheese, meat loaf and eggplant Parmesan.
