So says local restaurateur Ed Wary, whose mainland travels prompted a craving for the down-home cooking he tasted in America's heartland. Now with just one location in Aiea, this casual joint brings Southern cooking to the islands in a red-and-white tablecloth atmosphere. Whether it's the vinegary style of the Carolinas, the cayenne and celery seed flavors of Kansas City, or the sweet ketchup-like sauce of Memphis, Dixie does barbecue right no matter your regional preference. There's even a Hawaiian version, mixing mango, guava and chiles in a sweet-hot sauce. Beyond barbecued pork shoulder and baby back ribs, there's fried catfish and Dungeness crab. Share with friends the Trash Can Buffet for a sampling of all of the above, or try The Bar-B-Que Burger, which tops a juicy burger patty with pulled pork and melted cheddar cheese for a different kind of holy matrimony. A supporting cast of traditional fixings includes home-style favorites such as coleslaw, collard greens, corn on the cob and hush puppies. House-made desserts showcase heaven on Southern earth with Tennessee Jack Daniel's chocolate mousse pie, Georgia peach cobbler and Florida Key lime pie.
