Indirectly descended from local hot chicken granddaddy Prince's, East Nashville's Bolton's Spicy Chicken and Fish spares just enough of the fried-in-cayenne-pepper heat to make this version more palatable for amateur tongues, if not quite as eye-wateringly spectacular as the standard bearer. Now with a Melrose-area location, Bolton's is more like the fast-food version of hot chicken from Popeye's, which has kept the Louisiana hot pepper flag flying admirably for many years. The chicken offerings also include wings and chicken strips and are mild enough for children. Bolton's fish sandwich knows no superiors, however, and is best enjoyed with the standard hot sauce, yellow mustard, onions and dill pickles on top. Catfish, wings, ribs and barbecued pork shoulder also are available, with fries and most-excellent versions of mac and cheese and coleslaw the favored sides. No alcohol available. Serving lunch and dinner Mon-Sat. Closed Sun. "Bolton's manager Dolly Graham once said, 'Our chicken is hot, but it won't cause you to lose your composure.' That depends. The fact is that if you don't like really hot food, Bolton's chicken might indeed be reason for a melt-down, especially if you ask for it hot. What's great about it, for those who do like ferocious food, is that the heat is deep in the meat, right down to the bone itself. It is much more spicy than it is salty, making each bite a taste-buds adventure."
