Amerigo owners Doug Hogrefe and Paul Schramkowski smartly selected former Zola Chef Deb Paquette as a partner and to lead the kitchen at downtown's newly constructed Etch on the ground floor of the Encore tower. Just as wise before the August 2012 opening: Constructing an open kitchen in the spare dining room, since the slender, constantly in motion Paquette is always worth watching as she cooks, constructs and helps her staff construct her per-usual eclectic, globally influenced dishes. Early highlights include: the butter tasting appetizer, which is quite fun if not exactly heart friendly; Chinese-braised pork belly; beets and berries salad; Turkish spiced cobia; and Japanese-braised short ribs. Full bar. Serving lunch Mon-Fri, dinner Mon-Sat. Closed Sun. "The level of creativity and execution at Etch will come as no surprise to Paquette's fans, who are used to seeing her leave her mark on Nashville's dining scene. Meanwhile, for out-of-town visitors venturing outside the convention center, Etch will make an excellent and lasting impression."
