Nashville barbecue baron Jack Cawthon sometimes greets patrons at the doors of his two Jack's Bar-B-Que restaurants, one on touristy Lower Broadway across the alley from the historic Ryman Auditorium - look for the neon flying pigs sign out front - and the other in North Nashville off I-65 on Trinity Lane. You'll leave with a smile, too, after sampling his fine barbecue, which features Nashville's best pork ribs and most consistent sides. A combo plate with ribs, pork shoulder and beef brisket pairs nicely with mac and cheese, green beans cooked Southern-style (meaning cooked to glorious death), and fried apples. The nicely prepared smoked turkey breast, chicken and sausage also have their followers. Jack's deserves its ranking as one of the area's top caterers, too, and his memorable sauces are for sale by the bottle.
