Expect to wait patiently in a line that quickly wraps around the block every weekend and most weekday mornings outside half-century-old Hillsboro Village institution Pancake Pantry. And it's not called Pancake Pantry for nothing: Second-generation owner David Baldwin and his veteran, superstars-in-their-own-rights cooks, managers and servers carefully guard the secret to the delectable buttermilk variety - vanilla, perhaps? The 'cakes are ordered by the stack or arrive as a standard side to the sturdy-but-nothing-fancy omelets and other egg dishes. Breakfast is served all day, with traditional lunch items of sandwiches, soups and salads also on the midday menu. But, really: Why not the star attractions for lunch? Signature dishes: Two menu pages of pancakes, although the aforementioned buttermilk, spice, the potato and the blueberry come especially recommended; country ham and eggs; and the bacon-and-cheese omelet. It's very kid-friendly, as evidenced in mini pancakes in animal shapes and a wall often filled with crayon drawings by young patrons.   Kids' menu. No alcohol available. Serving breakfast all day from 6 am and lunch daily. "It is impossible to imagine being in a bad mood when eating here. After all, what's not to be happy about when you are eating excellent pancakes with plenty of butter and syrup and good coffee on the side?"
