THIS RESTAURANT CLOSED MAY 2013Proprietor and longtime pitmaster Rooster Beane opened Roosters Texas Style BBQ in August 2010 in the former upper Gulch home of Cafe 123 and, in recent years, his older brother Judge Aubrey Bean's Judge Bean's BBQ. (What's a missing e among brothers ...) Given this is Texas barbecue, not Tennessee, beef brisket gets the starring role, with pork relegated to baby back ribs and sausage. Other options include smoked chicken wings and thighs, calf fries (deep-fried testicles if you must ask) as well as a take on one of his brother's specialties, the shrimp Diablo: smoked shrimp and jack cheese stuffed in a jalapeno pepper, then wrapped in bacon.   Full bar. Serving lunch and dinner daily. "The good news is that the ribs are excellent: tender, with a balanced smoke and peppery rub. It would be a shame to put any sauce on these beauties. If you do indulge you'll find a tangy mild sauce without much depth and a truly spicy hot sauce that will get your attention."
