Chef Clay Greenberg (ex Virago and Lime) and Paul Cercone, previous owner of Charleston's Normandy Farm Artisan Bakery, have teamed to open Silo, already a go-to dining destination in the Germantown neighborhood since its August 2012 opening. As expected given their pedigrees, Silo specializes in locally sourced, Southern-inspired fare ("sophisticated farm food" as they describe it). Early highlights from the open kitchen: kale salad with house bacon and sweetened pecans; crispy pork belly with cauliflower and mushrooms; and Florida grouper with mustard greens, lump crab, Hollandaise and house bacon. Save room for the chocolate/peanut butter pie with Goo Goo cluster topping. Full bar. Serving dinner Tue-Sun. Sun brunch 10:30 am-2 pm. Closed Mon.
