Watermark has made quite a splash since its 2005 opening in Nashville's white-hot Gulch district, just south of downtown. Part-owner and Nashville native Jerry Brown recruited top chefs and other staff from renowned Birmingham, Ala., chef Frank Stitt's Bottega restaurant, helping to facilitate Music City's continually rising rank among culinary epicenters in the Southeast. Since then, chefs have come and gone. The upscale, regionally inspired contemporary menu caters to an urban and sophisticated clientele with dishes that have included hickory grilled lamb tenderloin, skillet-seared English ringneck pheasant breast, and sauteed red snapper. And there may be no better way to spend a Nashville night than on the gorgeous outdoor terrace atop Watermark's edifice. Full bar. Serving dinner Mon-Sat. Closed Sun. "Conservative offerings are well matched with countrified sides, as in pan-seared flounder with Vidalia onion mashed potatoes and green beans, or hickory-grilled duck breast with sausage grits and collard greens."
