At the French Quarter's acclaimed Cajun-Creole-Southern spot Restaurant R'evolution at The Royal Sonesta hotel, chefs John Folse and Rick Tramonto offer modern takes on classic Cajun,  Creole and Southern fare that has included coq au vin, paneed veal chop, and crawfish-stuffed flounder Napoleon.
