After earning an almost Pavlovian response to his name following the mammoth success of his Yountville, Calif., mecca of French-inspired American dining, Thomas Keller revealed to eager gourmands that his 2004 Manhattan venture would not be a second French Laundry, "per se." Fortunately, however, he brought more than just the signature blue door and Napa Valley serenity to the fourth floor of the Time Warner Center: A live, flat-screen, kitchen-to-kitchen feed is the epicurean nexus between two of the best restaurants in the world. At Per Se, which overlooks Central Park, two nightly nine-course tasting menus (and a no reservations, a la carte "salon" menu in the lounge that debuted in March 2009) showcase an emotional journey through seasonally sublime, high-concept tastes. The signature "Oysters and Pearls" (sabayon of pearl tapioca, Island Creek oysters and Sterling white sturgeon caviar) illustrates the way luxury foods should be consumed, but even simpler dishes, such as marinated summer squash with heirloom tomatoes and arugula with a divine tomato vinaigrette, are an epiphany of flavor and perfection.
