Ted Curtis opened his first Ted’s Café Escondido location in 1991 and immediately encountered a great problem to have: hungry patrons waiting outside in a long line. Since expanding to accommodate them with additional restaurants, each location boasts the promise, "If it’s not the best, it’s on the house." The meat for their famous fajitas marinates overnight and is grilled with fresh peppers and onions, then speedily delivered to the table in a sizzling skillet with accompanying soft tortillas. Generous portions and the complimentary chips, salsas — hotheads will enjoy the "atomic" green salsa — and sopaipillas keep Ted’s constantly busy, but the wait is worth your while.
