Small regional chain Dinosaur Bar B Que is the brainchild of three bikers who used to cross the country, serving barbecue at motorcycle shows and festivals. When it was time to settle down, they opened their first full-service joint in Syracuse, and 15 years later (1998), the Rochester location followed. Tucked inside an old train station, Rochester’s downtown Dinosaur features live blues music, a fantastic river view and custom retro murals by upstate N.Y. native Elliott Mattice. But all those details are just embellishments — the main event here is the meat. It’s slow-cooked for 14 hours in a smoker, which makes it tender and full of flavor. Sample the succulent meats with sandwiches, ribs and combination platters, which offer a choice of mouth-watering sides such as garlic-ginger green bean salad, barbecued beans and mashed potatoes. Honey cornbread is also included.
