"Alforon also emphasizes from-scratch flatbreads, like that very-thin crust, ground-beef-topped lahmbajeen and chuck-steak-strips on an unwrapped shawarma. You don’t need to be a minimalist to like the chicken tawook — chunks of mild chicken breast with garlic paste on a baked-just-past-chewy base. And all the flatbreads — baked in a custom-built alforon, Arabic for oven — feature halal meats slaughtered according to Islamic tradition."
